Pancakes:
2 cups all-purpose flour
1 teaspoon sugar
1 teaspoon salt
1 egg
3 teaspoons baking powder
1\2 cube melted butter
Milk
Syrup:
2 cups sugar
3/4 cup water
1 regular size Karo syrup
1 tablespoon maple flavoring

Pancakes:
Mix all of the above together adding enough milk to give the consistency of the pancakes you want. Fry on an oiled griddle until golden brown on both sides. If making waffles, use two eggs and follow the directions above.My grand son Grant is the pancake man.

Syrup:
Bring to a full boil and keep stirring, turn off heat and let cool on burner until cool. You can use any kind of flavoring you would like when making your syrup.

Not very many people make their own syrup. Please try this, it is better than what you buy in a store. The lady on the Aunt Jamina pancake mix always reminds me of Azzie. She wraped her head every morning with a fresh scarf. I never saw Azzie's hair and I don't know of anybody that ever did but through the years you could see the gray fringing out from under her head wrap. She loved to wear a hat to church. I was in the Shrimp Bowl Court and wore a big-rimed, black hat and Azzie told me "I want that hat when you finished with it". I said "Azzie that hat won't fit you!" and she told me "I'll make it fit!" and she did. Azzie slit the back of the hat and pulled it down on her head until it fit her then strutted off to church as proud as could be!! I sure miss her.
