2 cups persimmon pulp
2 teaspoons soda
2 1/2 cups sugar
2 cups chopped pecans
2 cups chopped raisins
1 cup oil
3 eggs
1 teaspoon vanilla
1 dash nutmeg
3 teaspoons cinnamon
2 1/2 cups all-purpose flour
1 teaspoon baking powder

Add baking soda to persimmon pulp mix and set aside. Use small portion of flour to lightly coat raisins and nuts and set aside. In a large bowl mix sugar, oil, vanilla, and eggs. Mix all dry ingredients (flour, baking powder, cinnamon and nutmeg) then add to mixture in a large mixing bowl with sugar, oil, vanilla and eggs. Stir in pulp, nuts, and raisins. Bake at 350° using three standard 5"x9" bread pans for 40 to 50 minutes.

Mama would have my brother, Phillip, send her persimmons from home in Mississippi, just so she could make this bread. It is so moist. My brother Phillip loved it, and Mama enjoyed making it for him.
