4 cups flour
2 teaspoons baking powder
1 teaspoon salt
4 tablespoons shortening
3/4 cup warm water
Vegetable oil

Directions:
Directions:
Combine dry ingredients and cut in shortening. Add water and mix well, working through until smooth. Cover and let stand 20 minutes, preheat about 2" vegetable oil to 420°. Roll dough to 1/8 inch thickness on a lightly floured board. Cut into 3" to 4" squares and fry until golden on both sides, turning once. If the oil is sufficiently hot, they will puff and become hollow shortly after adding the dough to the oil. Drain sopapillas on absorbent towels and serve as a bread with any Mexican meal. They are especially good served with honey.
