3 eggs
1 cup sugar
2 cups grated zucchini
1 cup salad oil
3 teaspoons vanilla
1/2 cup chopped nuts
3 cups flour
3/4 teaspoon nutmeg
1/4 teaspoon baking powder
3 teaspoons cinnamon
1 teaspoon Boone cloves
1 teaspoon baking soda

Directions:

Beat together eggs, sugar, zucchini, oil, and vanilla. Sift together dry ingredients. Stir in nuts. Add flour mix to egg mixture and blend well. Pour into two greased and floured 9"x5"x2" loaf pans. Bake at 350° for about one hour.

Mama always had a beautiful garden and more zucchini than she knew what to do with. She would grate it and put it in the freezer to make her bread all year long.
