Ingredients: 8 medium ripe tomatoes, or 4 really large Brandywine type tomatoes 8 oz fresh mozzarella cheese 1 medium cucumber, optional 1 medium red bell pepper 1/4 cup sliced red onions, to taste 2 Tbsp extra virgin olive oil 1 Tbsp balsamic vinegar, to taste 1 pinch kosher salt, to taste 1 pinch freshly ground pepper 3 tsp fresh herbs, minced

Directions:If you can get a selection of different types of heirloom tomatoes in various colors it will make this salad even prettier.
Whisk together the extra virgin olive oil and the balsamic vinegar. Add salt and freshly ground pepper to taste. Mince up whatever herbs you're using and add them to the mixture. I like to use basil, thyme, and perhaps a little oregano or mint.
Slice the red bell peppers, cucumbers, and onions and set them aside. I like to slice the peppers into half rings, the onions into thin strips, and I usually peel the cucumber first if its non-organic.
Slice the ball of fresh mozzarella cheese in half first, and then slice it into 1/4 inch or so slices. Lastly slice the tomatoes into 1/4 - 1/2 inch thick slices.
To make the salad arrange all of the slices of tomato, mozzarella, cucumber, red bell peppers, and onions on a platter or in a shallow bowl and drizzle the dressing on top. If you make it in the bowl you might want to drizzle some dressing over each layer. This is best served at room temperature and eaten immediately. |
