1. 1 lb. spaghetti, cooked "al dente" (not too soft)

2. 2-3 tbsp. olive oil

3. 1 cup shredded Parmesan cheese

4. salt and pepper to taste

5. A few sprigs parsley

Directions:
Directions:
1. As cooked spaghetti is draining, cover bottom of the pot you cooked it in with olive oil and return to warm burner.

2. Dump cooked spaghetti back into the pot and toss thoroughly to coat all of it with oil.

3. Sprinkle with salt and pepper to taste and continue to toss.

4. Add Parmesan in 3-4 steps, tossing spaghetti to distribute cheese evenly (if you add too much at a time, it will glob up into balls, ruining your presentation).

5. Transfer the spaghetti with cheese to your serving dish and garnish with parsley sprigs.

Additions: If you want something closer to Spaghetti Alfredo, you can add 1/2 cup half-and-half after tossing spaghetti in oil and before adding cheese.

Substitutions: Any other finely grated cheese you prefer. You can also experiment with mixes of different cheeses.

Powdered cheese (such as the Kraft stuff in plastic bottles) may be used, but the final product will be less tasty.
