1 cup yellow stoned ground grits, uncooked
1 pound ground pork sausage*
1 onion chopped
1 small can chopped green chilies
1 stick butter
2 eggs beaten
2 cups grated Mexican Blend cheese
5-10 dashes of Tabasco
1 teaspoon paprika

* I use hot sausage but mild is good also depending our your heat preference.

Directions:
Cook grits according to package directions in salted water until thick. Let cool slightly.
Saute' sausage, breaking into small pieces until done; remove from pan leaving grease. Saute' chopped onion in sausage grease; drain. Combine sausage, onion, and green chilies. Add butter, eggs, cheese, and Tabasco to grits. Combine grits mixture with sausage mixture. Sprinkle with small amount of additional cheese (optional) and paprika.
Bake at 325 degrees for 45-60 minutes or until set.
Can be made ahead of time and refrigerated up to 2 days before baking. Freezes well.

If refrigerated, remove and let stand for 30 minutes at room temperature before baking.
