1 cup organic sugar (200 grams)
1 cup Organic Oat Bran (94 grams)
1 1/2 tsp salt
1 cup boiling water
1 cup melted butter
2 well beaten large eggs ( at room temperature)
2 tbsp yeast (only use Red Star)
1 cup lukewarm water ( 100 - 115 degrees )
6 1/2 cups all purpose flour (780 grams)

Melt the butter on the stove.

Bring the 1 cup water to boil on the stove.

Combine the melted shortening with the All Bran, sugar, and salt in the mixing bowl. Add the boiling water. Cool to lukewarm. Use the whisk attachment.

While this is cooling, proof your yeast in the 1 cup lukewarm water with 1 tsp sugar. When the mixer mixture is lukewarm, add the eggs and yeast to this.

Add half of the flour. When incorporated, add remaining flour gradually until the mixture climbs the attachment.

Remove from the mixer onto a floured surface. Add enough of the flour by kneading in until your handprint springs back from the dough.

*Depending on the weather, sometimes you will use all the flour and sometimes less. Judge by the handprint.

Place in a greased bowl. Cover with a cup towel and let rise in a warm place for an hour.

When risen, shape into balls and place on greased baking sheet. Let rise for another hour or until doubled in bulk.

Bake @ 425 for 10 - 15 minutes.
