3 tablespoons Wesson oil
1 large onion, chopped
1 or 2 cloves garlic, chopped
1 cup uncooked rice
1 can whole tomatoes
Salt to taste
Pepper to taste
2 1/4 cups chicken broth*

Directions:

*Or use 2 cups water and 2 bouillon cubes.

In a large skillet, saute onion and garlic in the oil until clear. Add the rice and cook until browned. Crush the tomatoes and add all, juice and pulp, to skillet. Add the broth and season to taste. Cover and cook on low for about 30 minutes until rice is tender and liquid is absorbed.
