Eggplants
1 beaten egg
Salt and pepper
Italian breadcrumbs
Directions:
Directions:
Cut eggplants in half-inch slices. Soak in salted ice water for about 15 minutes. Dry on paper towel and salt and pepper to taste. Dip in beaten egg then Italian breadcrumbs. Fry in hot oil until brown.
