2 1/2 to 3 pounds meaty spareribs cut into bite-size pieces
Salt
2 tablespoons soy sauce
2 to 3 tablespoons cornstarch
1/2 cup sugar
1/2 cup ketchup
2 tablespoons vinegar
2 cloves garlic, minced
1 large green pepper (1 inch strips)
1 large onion, chopped
2 stalks of celery (1/2 inch slices)
2 cups pineapple chunks

Directions:
Directions:
Cook ribs in salt water (1 teaspoon salt to 1 quart water) for 30 minutes to remove excess fat. Drain, reserving 1 cup broth. Mix together soy sauce and cornstarch, set aside. Combine sugar, ketchup, vinegar, and garlic for sweet and sour sauce; set aside. In a large skillet or deep frying pan, combine ribs and soy sauce mixture. Cook over medium heat, stirring constantly, until sauce thickens and becomes dark brown. Pour the sweet-and-sour mixture over the spareribs, mix well. Lower heat, simmer covered for 20 minutes, stirring occasionally. If sauce thickens too rapidly, add some of the reserved broth. Add vegetables and pineapple chunks, cook 10 minutes longer or until vegetables are crisp-tender.
