3 to 5 pounds meat (chicken, sausage, rabbit, squirrel, etc.)
Cooking oil
Meat sausage
2 or 3 large onions
4 to 6 cloves garlic, minced
1 to 2 bell peppers, chopped
1 1/2 cups chopped shallots
1 tablespoon Worcestershire sauce
2 cups long grain rice
4 cups water
Salt to taste
Pepper to taste

Directions:
Brown meat in cooking oil. Add onions and brown. Add shallots, bell pepper, and garlic and cook until soft. Add water using two parts water to one part rice to be added later. Add salt, pepper, and Worcestershire sauce. Bring to a rolling boil for 15 minutes. Add rice to pot. Bring to boil again reduce fire as low as possible and cover pot. Cook for 1 1/2 hours then turn jambalaya do not stir. Cover again, cook 15 minutes longer over low fire, then serve.
