1 1/2 pounds sausage
1 (6 oz.) hash brown potatoes
3 to 4 tablespoons butter
6 eggs
2 1/2 cups milk
Salt and pepper to taste
1 cup or more grated cheddar or Monterey Jack cheese
Directions:
Directions:
Brown and drain sausage. Brown hashbrowns and butter. Beat eggs, milk, salt and pepper together. Layer sausage and potatoes in greased baking dish. Pour egg mixture over sausage and potatoes and top with grated cheese. Bake at 350° for 45 minutes.
Double recipe reducing milk to 4 cups will fit in a 13"x9" pan. The meat and potatoes can be made a day ahead, adding the mixture when ready to bake.
This dish freezes well and servings can be reheated in microwave.
