For cake:
1 1/4 c. oil
2 c. sugar
4 eggs
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 c. grated carrots

For frosting:
1 stick margarine
1 lb. sifted sugar (about 3/4 cups)
2 tsp. vanilla
1 8-oz. package cream cheese

Directions:

Make cake:
Blend oil and sugar.
Beat in eggs one at a time.
Sift dry ingredients and add to the mixture.
Add carrots.
Pour into a greased and floured 9 x 13 pan.
Bake at 350 degrees for 1 hour and 15 minutes (but test at 45 minutes).

Make frosting:
Cream together margarine, sifted sugar, vanilla and cream cheese.

I got this recipe years ago from a former coworker. It so good I probably won't ever make a different carrot cake recipe.
