1 Bag frozen peas
1 Medium onion,chopped
1 Medium green pepper, chopped
(or 1/2 red and 1/2 green for color.)
1 Large tomato, chopped
Mayonnaise (1/2 cup or more)
Salt and Pepper to taste

Directions:
Bring peas to a boil then let sit 5 minutes. Drain, run cold water over peas to cool down. Drain
Mix first 3 ingredients that are chopped up small to peas. Mix in Mayonnaise then add tomatoes. Salt and pepper. Chill and serve

Sometimes I add Pasta (Rotini) for a change. You may need a little more Mayonnaise. If feeding a crowd double
