4 eggs
1/2 cup butter
1 cup light brown sugar
20 ounce can slice pineapple
10 maraschino cherries
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup white sugar
1 tablespoon butter, melted
1 teaspoon almond extract

In a 10" cast iron skillet, melt 1/2 cup butter over low heat. Remove from heat and sprinkle brown sugar over pan. Arrange pineapple slices over brown sugar and distribute cherries. Separate eggs into 2 bowls. In large bowl beat egg whites until soft peaks form. In separate bowl, beat egg yolks until thick and yellow. In third bowl, combine flour, baking powder and salt. Gently fold egg yolks, flour, baking powder and salt into whites until well blended. Fold in melted butter and almond extract. Spread batter evenly over pineapple in skillet. Bake at 325º for 30 to 35 minutes or until springs back when touched lightly with fingertip. Loosen edge of cake with a table knife. Cool for 5 minutes before inverting on serving plate,.
