2 T. olive oil
2-3 lbs. pork spare ribs
salt and pepper, to taste
1 med. onion chopped
6 med. potatoes, lg. cubes
1 lb. sauerkraut
1/2 c. beef stock

Directions:
Directions:
Preheat oven to 350º or cock pot set at low.

Heat oil in large heavy bottom pan (or skillet, if using crock pot), salt and pepper ribs then brown in pan. Remove from pan and add in onions to soften. Add potatoes. Add ribs back in and cover with sauerkraut and stock.
Cover with lad and cook for 2-3 hours or til ribs are very tender.

If it gets too dry add a little extra stock.
