CAKE:
1 cup sifted cake flour
1/4 cup cocoa
3 large eggs (separated)
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
5 tablespoons water

FILLING:
8 ounces cream cheese, softened
1/4 cup butter, softened
1 cup powdered sugar
1/2 teaspoon almond flavoring

Directions:
Directions:
Cake: Sift together flour, cocoa, baking powder and salt and set aside. Beat egg yolks about 5 minutes until light. Add 3/4 cup sugar and beat well. Add water and almond flavoring and set aside. Beat egg whites until frothy and add 1/4 cup sugar. Beat until stiff. Fold egg whites into yolk mixture. Fold in dry ingredients and pour into 15x10" pan lined with parchment paper and greased. Bake at 350º for 20 minutes. Cool for 5 minutes. Turn cake onto kitchen towel dusted with powdered sugar and peel off paper. Roll up cake in towel jelly roll style. Cool completely,

Filling: Combine all ingredients and beat until smooth. Unroll cake and spread filling over cake to 1/2 inch of edges. Roll up again and place seam side down on serving platter. Cover and refrigerate at least 1 hour before serving. Roll can be made ahead of time and frozen.
