2 cups sugar
3 eggs
1 1/2 cups oil
2 teaspoons vanilla
2 teaspoons soda
1 teaspoon salt
2 teaspoons cinnamon
2 cups flour
2 cups grated raw carrots
7 ounces coconut
1 small can crushed pineapple (do not drain)
1 cup nuts

Directions:
Directions:
Beat eggs, sugar, oil and vanilla together until creamy. Add dry ingredients and mix well. Blend in carrots, coconut, pineapple and nuts. Pour into ungreased 9x13" pan. Bake at 350º for 50 minutes.
Frost with cream cheese or buttermilk frosting.
