Combine flour, salt and sugar. Evenly cut shortening into flour mixture with pastry blender. Combine egg and vinegar in small bowl and add to flour mixture. Add water a tablespoon at a time until dough is moist enough to form a ball. Shape into 2 balls. On flour surface, roll into 11 inch circle. Fold in half and transfer to pie plate. For filled crust pie, roll second dough ball. Put filling into crust in pie plate and cover with second crust. Cut several small vents, brush with egg wash and bake as directed. For unfilled pie shell, put in pie plate. Prick sides and bottom with fork. Bake at 450º for 10 minutes or until light golden brown.
