1 c slivered almonds
1 ½ c flour, spooned and level
½ c flaxseed meal
2 t baking powder
1 ½ t cinnamon
½ t allspice
¾ t salt
2 large eggs
1 t vanilla extract
2 large egg whites
1 1/3 c granulated sugar
1 c extra light olive oil
3 c coarsely grated carrots
1 c finely diced peeled apple
8 oz full fat cream cheese
6 oz reduced fat cream cheese
2 ¼ c confectioners sugar
sliced almonds for decoration

**Preheat oven to 350. Grease two 9 inch cake pans line the pans with parchment or waxed paper and grease the paper.
**In a food processor, grind ½ c of the almonds to get a coarse meal. Set aside the remaining slivered almonds. In medium bowl, combine the ground almonds, flour, flaxseed meal, baking powered, baking soda, cinnamon, allspice and salt.
**In a large bowl, beat the eggs, egg whites and granulated sugar until lemon colored. Beat in the oil. Fold in the flour mixture. Stir in the carrots, apple and slivered almonds.
**Spread the batter evenly in the pans. Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes. Turn out onto a rack to cool completely.
**Meanwhile, in a small bowl, beat together the 2 cream cheeses, confectioners sugar and vanilla. Frost the cake once it has cool. If desired press some sliced almonds around the outside of the cake.
