FILLING:
1 can condensed milk
1/2 cup lime juice
4 egg yolks (reserve 3 whites in one bowl, 1 egg white in another bowl)
Green food coloring

Baked 9" pie shell.

MERINGUE:
3 egg whites
1/2 teaspoon cream of tartar
1/3 cup sugar

Directions:
Directions:
Filling: Beat together milk, lime juice and egg yolks. Add a few drops green food coloring. In a separate bowl, beat one egg white until stiff. Fold into condensed milk mixture and put in pre-baked 9" pie shell.

Meringue:
Beat egg whites and cream of tartar. Once foamy, gradually add sugar. Beat combined mixture until stiff but not dry. Spread over key lime filling, spreading to edges to seal pie. Bake at 350º for 12-16 minutes or until golden brown. Refrigerate at least 4 hours before serving.
