1 9" baked pie crust
1/4 cup cornstarch
2/3 cup sugar
1/4 teaspoon salt
2 cups scalded milk
3 egg yolks (slightly beaten)
1/2 teaspoon vanilla
2 tablespoons butter
3 bananas
3 egg whites
1/2 teaspoon cream of tartar
6 tablespoons sugar

Directions:
Directions:
In a saucepan, warm milk; add sugar, salt and eggs. Mix part of the cold milk with the cornstarch and add when the milk is hot. Stir to keep lumps from forming. Add vanilla and butter last. Cool pudding until room temperature. Slice bananas and line bottom of pie crust with them. Pour pudding mixture over bananas and add another layer of bananas on top of pudding. For meringue, beat egg whites until they start to stiffen and then add sugar and cream of tartar. Beat until peaks form. Put on top of pie and bake at 400º for 10 minutes or until golden brown.
