3 or so eggs per person (an omelet over 4 eggs is too large to fold properly)

butter
water or 2% milk

--grease the bottom of a small to medium-sized saucepan by melting a couple slices of butter
--in a bowl, break the eggs and add a small amount of water or milk (roughly a third to half a cup). add the spices and a pinch of salt to taste, and mix all.
--put the heat on medium-low. it's ok to pop some of the larger bubbles that arise. you may hear a faint "psscht" sort of sound, which is an indication the omelet is ready to be turned; otherwise, watch the edges.
--once the edges of the omelet are firming and turning brown, careully use a ladle to life one side of the omelet and gently flip it over onto the next third of the omelet. do the same with the other side, so that you end up with a folded omelet in the french style. If any egg is oozing out of the middle cook the omelet a little bit longer to firm up the center, but be careful not to burn or dry it out; a little bit runny tastes better than an omelet that's too dry,
--serve immediately while still piping hot.

5-10 minutes prep; the omelet will cook very quickly at medium heat, as short as in 3-4 mn.

Very French dish, often served at dinner (French dinners are traditionally the lightest meal of the day after breakfast) along with a few other courses (a little bit of meat, some vegetables). My mother is fond of making this kind of omelet for lunch.
