1/2 c. butter
1 medium onion, diced small
2 stalks celery, diced small
1/2 c. flour
4 c. chicken broth
12 oz. beer
1 1/2 c. shredded cheddar cheese
1/2 tsp. dry mustard
salt and pepper to taste
Bacon, cooked and crumbled (optional)

Melt butter in saucepan. Stir in onion and celery and cook until soft. Sprinkle in the flour and cook, stirring constantly, 3-4 min. Slowly whisk in first the broth, then the beer. Bring to a boil. Reduce heat and simmer 20 min. Slowly whisk in the cheese. Add the mustard. Remove from heat and serve immediately. Garnish with bacon if desired. If leftovers, will need to whisk while reheating.
