4 potatoes, baked
8 oz. reduced fat cheddar cheese, grated
1 c. fat-free sour cream
2 T. chopped green onion

Directions:
Directions:
Cut each potato into quarters lengthwise. Scoop out pulp. Spray potato skins with cooking spray and place on baking pan. Bake at 425 degrees for 10 minutes. Turn and bake for an additional 5-8 minutes or until crisp and light brown. Remove from oven and place cheese, sour cream and onions on each square. Return to oven and bake until cheese melts.
