3 4-ounce bars sweet baking chocolate, chopped
2 tablespoons butter
1 teaspoon instant coffee granules
3 eggs
1 1/4 cups sugar
1 teaspoon vanilla
1 cup chopped pecans
6 tablespoons flour
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
Pecan halves (optional)
Powdered sugar (optional)

Directions:

Heat chocolate and shortening over low heat until chocolate begins to milk. Remove from heat. Add coffee and stir until smooth. Cool. Beat eggs and sugar until light and lemon colored (3 or 4 minutes) Beat in chocolate mixture and vanilla. On low speed, add in chopped pecans, flour, cinnamon, baking powder and salt until well combined. Drop teaspoons of dough 2 inches apart on cookie sheet sprayed with nonstick coating. Place a pecan half on top of each cookie if desired. Bake at 350º for 8 to 10 minutes. If desired, sprinkle with powdered sugar.
