1 (14 oz) can chicken stock, 1 tsp grated lemon rind, 2 Tbls fresh lemon juice, 1/2 tsp salt, 1 box (10 oz) plain couscous, 1 jar (4 oz) chopped pimentos (drained), 1 box (10 oz) frozen peas (thawed), 1/2 cup slivered almonds (toasted) 1/4 cup raisins.

Bring chicken stock, lemon rind, lemon juice and salt to a boil in a medium size saucepan. Stir in couscous. Remove from heat. Let stand 5 minutes for couscous to absorb liquid. Fluff with fork. Combine couscous, pimento, raisins, and almonds in a large serving bowl.
