1 cup brown sugar
1 stick butter--softened
1 egg
1 teaspoon vanilla
3/4 cup crushed pineapple (not drained)
2 cups sifted flour
1 teaspoon baking powder
1/2 teaspoon EACH baking soda & salt
1/2 cup raisins
1/2 cup chopped walnuts or pecans

Directions:
Directions:
Cream together sugar & butter. Add egg and Vanilla: beat well. Stir in pineapple.Set aside. Sift flour, baking powder, baking soda & salt. Add to first mixture & beat well. Stir in raisins & nuts. Drop tablespoonfuls onto greased cookie sheet. Bake 12 - 15 minutes at 375º or until lightly browned
