10 Thick Skinned Lemons
1---- 750ml Bottle of 100% proof Vodka
2 c. Sugar
2 c. Water

Wash lemons well. Pat dry. Using a zest peeler, zest the lemons. If you get some of the pith with the zest, carefully cut it away with the tip of a knife. Fill a jar with the vodka and the zest. Cover and let it sit 30 days at room temperature in a dark place.
Combine the sugar and water in a saucepan, bring it to a boil and cook until thickened, about 5 minutes. Let the syrup cool. Add it to the limoncello mixture and return to a dark place for another 30 days. Strain the linoncello into bottles and discard the zest. Store in the refigerator or the freezer.

We make this a couple times a year. It is a hit during the holidays with our family and friends. We purchase small fancy bottles with corks and give them away as gifts during the holidays.
This recipe can be doubled.
