1 pound of the leanest ground turkey breast you can find
Bread crumbs (about ˝ a cup) for the meatballs
Seasonings (salt, pepper, garlic powder & seasoned salt) for the meatballs
1 egg
2 tablespoons of olive oil (to brown the meatballs in)
1 medium onion
5 cloves of garlic
3 stalks of celery
4 carrots
1 can of green beans
1 package of button mushrooms
1 bunch of kale
1 can of white hominy (15.5 oz)
˝ cup of wild rice or wild rice mix
5 cans of chicken stock/broth
2 large or 3 medium bay leaves
1 teaspoon of Herbs de Provence

Make the mini meatballs with the ground turkey, bread crumbs, egg and seasonings. ( I think I used garlic salt, garlic powder, salt, pepper, maybe a little seasoning salt etc. use your favorites in the cabinet) Put some olive oil in the bottom of your soup pot (not a lot just enough to keep them from sticking to the bottom) brown up all of your meat balls and take them out & put them in a dish. They may need to be done in batches.
Chop up the garlic, celery, onions and carrots and sauté them in the pot after you are done with the meatballs…I usually salt them just a little after I throw them in the pot. Stir occasionally.
Clean and slice the mushrooms. Throw them in with the onions/garlic/celery & carrots.
Add in the Herbs de Provence
Add in the bay leaves
When the onions are soft and the mushrooms cook down a bit, add in the drained green beans, drained hominy and put the meatballs back in. Add the chicken stock. Turn it up so that you can bring it to a boil. When it starts to boil, add in the wild rice, stir and bring down to a simmer. Put a lid on the pot. Simmer for about 30-45 minutes, stirring occasionally. Chop the kale then add it after the 30-45 minutes, add it to the soup and simmer for another 30-45 minutes, stirring occasionally.
As far as the stock goes…I would buy 6 cans and start out with 4, I think I usually use 5…if it looks too thick or not soupy enough add an extra can…if it cooks down then you have an extra can just in case.
For a hearty beefy version use ground beef meatballs and beef stock.
