olive oil
1 vidalia onion
2 cloves of garlic (fresh or jarred)
2 cans (28 ounces) of diced tomatoes
1 small can tomato paste
dried oregano
dried basil
kosher or sea salt
ground pepper

Directions:
Directions:
1.Pour olive oil three to four turns in a pot so the bottom is mostly covered in a thin layer and heat.
2.Slice onion and break it apart into rings or half rings in the pan (pan should be hot enough that you hear a sizzle).
3. Add garlic, and sprinkle basil and oregano all over the onion until it is moderately covered, stir and let cook, stirring often until onions are soft and translucent.
4. Stir in diced tomatoes and tomato paste, at this time you can add salt and pepper to taste.
5. Let simmer on low for 20 to 30 minutes until it thickens a bit.
6. I add sugar and a few squirts of ketchup to take any bitterness out...sweeten to personal taste.

I will add this to pasta dishes, eggplant parmesan, and sometimes add mushrooms or green pepper its extremely versatile.
