1 box of long grain and wild rice
1 bottle of oil based salad dressing
chopped onion
chopped cucumber
chopped tomatoes
sliced black olives

Directions:
Directions:
Make rice according to directions and put into bowl. Pour enough of the bottled salad dressing in to make the rice "soupy" as rice will absorb some of it. Add the vegetables, again making sure it is soupy. Refrigerate adding more dressing if needed before serving so the salad doesn't appear dry. Best if made a day or two ahead to let marinate.

I get asked for this recipe often and people are amazed that it is this easy. You can substitute or add whatever you like in the way of vegetables - mushrooms, artichokes or whatever can hold up during the refrigeration. It is great that there are so many flavored oil based dressings on the market now.
