Ingredients: 1 small cans chopped green chilies 1 can cream of chicken soup 1 can green enchilada sauce 1/4 c mayonnaise or salad dressing 12 corn tortillas cut into 3/4 inch strips 3 c cooked shredded chicken 1 can black beans drained and rinsed 1 c mexican shredded cheese 2 c chopped tomatoes 2 c chopped lettuce 1/2 c sour cream

Directions:Spray inside of crockpot with cooking spray. Spread 1 can green chilies in pot. Mix remaining can with the soup, enchilada sauce and mayonnaise/salad dressing. Arrange 1/3 of the tortilla strips over green chilies already in pot. Top with 1 c of the chicken and 1/2 c of the beans, 1/2 c of the cheese and 1 c of the mayonnaise mixture spreading to edges of pot to completely cover tortilla strips. Repeat layers twice and cover with last 1/2 c of cheese. Cover and cook on low for 6 to 7 hours. Serve with tomatoes, lettuce and sour cream. |
