Beef Tenderloin
Fresh garlic, made into a paste
Lots of pepper
EVOO

Directions:
Directions:
Arrange the tenderloins on a roasting pan or heavy-duty cookie sheet.

Drizzle EVOO over tenderloin and generously pat garlic paste all over it. Then generously sprinkle with pepper making sure it sticks. ( We do this the night before so the flavors marinate well.)

Cook for 15 minutes @ 450º, then turn down to 200º and cook for 20 minutes per pound, or until internal temperature reads 120º for rare.

Let sit for 15 minutes before cutting.

This is our Christmas Day dinner. We serve it with Gorgonzola Cream Sauce and Peppercorn Sauce. And of course Donna Potatoes, Peas, and rolls. Austin and Seth make themselves sick on this one :)
