1 cup yellow cornmeal
2 eggs
1 cup buttermilk
1/2 tsp. soda
3/4 tsp. salt
1 cup creamed corn
1/2 cup oil
1/2 # sausage or hamburger, cooked and drained
1 large onion chopped
1/2 # grated cheddar cheese
1 jalapeno pepper chopped

Directions:

Mix together corn meal, eggs buttermilk, soda, salt, creamed corn, and oil. Add onion and grated cheese.

In a CASTIRON skillet put 1/4 cup oil. Heat and sprinkle with 2 tbsp corn meal. Brown slightly in 400º oven. Reduce heat to 350º.

Put 1/2 of cornbread mixture in skillet, then all of the meat, the rest of the cornbread mixture.

Bake @ 350º for 40 minutes.
