9" pie crust, prebaked
3 egg yolks
1 cup sugar
dash of salt
1 1/2 cups evaporated milk
2 tbsp. cornstarch
1/2 stick butter
1 cup coconut
Cool Whip or homemade whipped cream
Toasted coconut

Directions:
Directions:
Prebake a 9" pie crust.

Add egg yolks, sugar, salt, milk, and cornstarch to a microwave safe glass bowl. Mix together.
Cook mixture in microwave on high for about 5 minutes (or until bubbles) until thick.
Remove and stir well.
Add butter and vanilla and cook for 1 - 2 minutes more.
Add coconut.
Pour the coconut mixture into piecrust and cover until ready to serve.
Just before serving spread with whipped cream and toasted coconut.
