Red Wine
Thyme
Mushrooms
Olive Oil
Salt and Pepper

Directions:
Directions:
* Heat oven to 400º
* Add wine to a saucepan on medium high. When reduced a little add mushrooms an let simmer.
* Oil, salt and pepper the lamb on all sides. In a skillet on medium high heat add some olive oil and sear all sides of the lamb until browned.
* Place the lamb in a roasting pan and cook until internal temperature reaches 125-129º.
* Take mushrooms out of the reduction
* In the skillet the rack was seared in, pour the wine reduction and thyme.
* Simmer until reduced.
* Remove thyme and drizzle over sliced lamb chops.
