"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Cook sausage in a skillet until done (no pink left) and drain well. ( I use a stack of paper towels in a plate to pull the grease out)
Mix cream cheese, Parmesan cheese, garlic, salt and pepper.
Fold in the sausage and mix well.
Spoon sausage mixture into each jalapeño half, arrange in one or more casserole dishes.
Bake on 350 for 20 minutes or until the cheese turns golden.
Serve with ranch dressing (optional)

Hint: you may want to use gloves when de-seeded the jalapeños.
