Refrigerator Rolls Recipe

2 pkgs. active dry yeast; 1-3/4 c. warm water (110-115º); 1/2 c. sugar; 1 T. salt; 5-1/2 c. to 6 c. flour; 1 egg; 1/4 c. shortening, butter, or regular margarine.

1. Sprinkle yeast over warm water in large bowl; stir to dissolve. Add sugar, salt, and about one-half the flour. Beat with electric beater on medium speed for 2 minutes, or by hand until mixture is smooth.

2. Add egg and shortening. Beat to mix. Mix in remaining flour with hands or a spoon until dough is easy to handle (or use bread-dough beaters). Shape into a ball and place in lightly greased bowl; turn greased side of dough up. Cover tightly with aluminum foil or plastic wrap.
3. Put dough in frig and let rise at least 2 hours or until doubled. Punch down dough every day until you use it. (Can keep in frig up to 5 days). 2 hours before wanting rolls/bread loaves, shape into pans as desired and let rise in warm place until nearly doubled; about 1-1/2 hrs. Butter tops.
4. Bake at 400º for 12-15 minutes.

Making bread takes a little time and you do have to wait on it to rise, but homemade bread is oh, so good. This dough is different in that the first rising takes place in the refrigerator. This is my favorite bread recipe from Farm Journal Country Cookbook. Aunt J.
