4-5 dried Ancho Chili Peppers, Seeded and Stemmed and ribs discarded (I do this after soaking)
2 cups boiling water
1 medium onion quartered
3 garlic cloves coursey chopped
2 TBSP finely chopped canned chilie in adobo, plus 2 tsp. of the adobo sauce
2 TBSP Pure Maple Syrup (Molasses)
1 TBSP lime juice (Fresh preferrably)
1 TBSP salt
1 tsp. black pepper
1 TBSP vegtable Oil
1/2 cup brewed coffee
6 lbs Beef Short Ribs or Flanken

Preheat oven to 350º.
Soak the Ancho Chilis in the boiling water for about 20 minutes or until soft. Then drain them in a colander over a bowl reserving the liquid. Remove Stems, seeds and Ribs from chilis and place chilis in food processor. Puree Chilis, Onion, garlic, adobo chilis and sauce, lime juice, 1 tsp. of the salt and syrup.
Pat Ribs dry and season with remaining 2 tsp. salt and pepper. Heat Oil in 12" skillet over moderately high heat until hot but not smoking. Add the ribs in 3 batches and brown on each side (5-7 minutes). Transfer ribs to roasting pan just large enough to hold ribs in a singe layer.
