1/2 C. butter
1/2 C. onion, chopped
1/2 C. flour
6 C. Whole milk
4 large baking potatoes, peeled and cubed small
7 oz. sour cream
3/4 tsp. salt
1/2 tsp. pepper
1 C. shredded cheddar cheese
1 1/2- 2 C. cubed ham
Bacon, cooked and crumbled (optional)

Directions:
Directions:
In a large saucepan melt butter and saute onion until tender. Stir in flour. Heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes. Bring to a boil, stirring constantly. Reduce heat and simmer for about 20 minutes or until potatoes are soft. Add sour cream, salt and pepper. Remove from heat and stir in cheese until melted. Garnish with crumbled bacon if desired.
