-Apple Mixture: 2 apples, peeled and sliced, 2 Tbls lemon juice, 2 Tbls sugar, 1/2 tsp ground cinnamon, 4 Tbls butter
Pancake batter: 3 eggs, 1/2 cup flour, 1/2 tsp salt, 1/2 cup milk, 2 Tbls butter (melted), powdered sugar

Preheat oven to 425º Peel apples and toss them in lemon juice. Mix sugar and cinnamon and sprinkle over apples. Melt 4 Tbls butter in an iron skillet and cook apples until almost tender. Combine eggs, flour, salt milk, and 2 Tbls melted butter in a blender and blend until smooth. Pour batter on top of apple mixture and place in a preheated oven. Check after 15 - 20 minutes. Pancake should be golden and puffy. Sprinkle with powder sugar and serve immediately

If you are feeding a crowd and have two iron skillets, double the recipe and cook two at the same time. They are easy to prepare and look so dramatic when right out of the oven.
