Meatballs: 1 1/2 lbs, ground beef, 1 egg (beaten, 3 Tbls water, 1/2 cup dry bread crumbs, 1/4 tsp salt, 1 Tbls salt, 1 Tbls chopped parsley, 2 Tbls butter
Soup: 2 cups water, 1 can condensed beef broth (undiluted), 1 can (1 lb 12 oz) tomatoes, (undrained) chopped, 1 envelope dry onion soup mix, 1 cup sliced carrots, 1/4 cup chopped celery tops, 1/4 cup chopped parsley, 1/4 tsp pepper, 1/4 tsp dried oregano, 1/4 tsp dried basil leaves, 1 bay leaf

Make meatballs - combine beef, egg, water, bread crumbs, salt & parsley. Mix lightly; shape into 24 balls. Brown meatballs in a 5 qt Dutch oven, single layer at a time. **Drain - set aside. Make soup - Combine ingredients in Dutch oven. Bring to a Boil - Reduce heat; cover and simmer 20 minutes. Add balls; simmer 20 minutes longer.
** To make meatballs in oven: place balls on baking sheet in a 450º oven for 15 minutes. Shake pan and cook 5 minutes more. Much easier than frying in batches.
