1/2 cup of Uncle Ben's Wild Rice (save spice packet for another use), 1 1/2 cups water, 1/2 lb bacon, cut into pieces, 1/4 cup chopped onion, 2 cans of cream of potato soup (dilute with 1 can liquid - 1/2 can milk, 1/2 can water)1 qt milk, 2 1/2 cups grated cheddar cheese

Combine wild rice and water and cook according to package directions. Drain, set aside. Fry bacon pieces and onion in skillet until bacon is crisp. Place bacon and onion on paper towels. Place soup in a large pot: dilute as directed above. Stir in milk ( 1 qt), bacon, onion, cheese and cooked rice.Stir until cheese is melted.

This recipe can be doubled. The Uncle Ben's rice box is exactly 1 cup; the doubled amount. Save rice seasonings packet for another use
