1-2 slabs of St.Louis style or medium spare ribs
Favorite rub recipe or marinade

Remove the membrane on the underside of each slab of ribs. Use your favorite rub recipe or marinade. When ready to cook, use indirect heat, preferably a charcoal or propane smoker. For gas grills, use an aluminum foil packet of wood chips. Cook ribs uncovered at 225-250 º for about 3 hours or until the meat starts pulling away from the bone about 1/4 of an inch. Next wrap them tightly/completely in foil, adding a little of your reserved marinade or some apple juice for moisture and place back on the grill for another 2 hours. This is what makes them tender. Next remove them from the foil and place back on the grill for about another hour to firm them up. Look for an internal temperature of about 170-175º. Just prior to removing them, slather on your favorite BBQ or finishing sauce. Let them rest a few minutes before slicing/serving.
