8 cups beets
1/2 cup horseradish
1 tsp. salt
1/16 tsp pepper
2 cups sugar
1 cup vinegar
1 cup water

Directions:
Directions:
Wash, then boil beets until tender. After removing skin, shred in the food processor. Mix all ingredients together in a large pot and heat until boiling. Pour into prepared canning jars and leave to cool and seal. OR do not heat mixture, pour into prepared jars and boil in a canner to seal.
