5-6 cups cooked potatoes or use the frozen square hash browns; 1 tsp. salt; 2 c. cottage cheese; 1 c. sour cream; 1/4 to 1/2 c. chopped green onions; dash garlic powder (optional); 3/4 c. grated cheddar cheese; sprinkling of parsley and paprika.

Dice the cooked potatoes to make 5-6 cups, or measure out 5-6 cups of frozen hash browns.

Combine potatoes, salt, cottage cheese, sour cream, onion, and garlic. Poor into large glass baking dish.

Spread cheddar cheese evenly over mixture and sprinkle with parsley and paprika.

Bake at 325º for about 45 minutes. Allow to set a few minutes before serving.

This will eat a hole in an aluminum pain if left to set very long--don't know why--but I ruined a cake pan this way. Probably the acidity of the sour cream?!!!
