1 1/2 c butter; 3 c sugar; 6 large, medium-ripe bananas; 4 eggs; 1 T vanilla; 4 c sifted flour; 2 T soda (Glenn said key was to use only fresh soda); 1 1/2 tsp salt; 1 c buttermilk; 1 c chopped pecans or walnuts (optional)

Directions:
Cream butter and sugar; blend in bananas, eggs and vanilla. Sift flour, salt and soda together; add to banana mixture alternately with buttermilk. Stir in pecans or walnuts. Pour into two greased and floured loaf pans. Bake at 325º for 1 1/2 hours. Cool in pans on rack for 20 min. Turn out and cool before slicing. You can use smaller loaf pans (7) for Christmas gift giving.
