Preheat oven to 400º Lay bacon on baking racks in a baking sheet. Bake 15-20 minutes. DO NOT TURN.

To make Maple-Roasted Bacon: after bacon has cooked 15 minutes, remove pan from oven (Careful, will be very Hot) brush bacon with maple syrup and return to oven to bake 5 more minutes. Transfer to paper lined serving dish and serve warm.
